GOSHEN — Purdue Extension health and human science educator Virginia Aparicio has a goal of teaching Elkhart County residents the value of eating healthy.

“I feel like a lot of people do find it hard to eat healthy. They feel like it’s too expensive and it’s a barrier they have,” she said.

Teach people about macronutrients and how to calculate and identify what the body needs. Learning cool facts like how brands advertise is useless.
