ELKHART— The second Jimmy John's sandwich shop in Elkhart is opening on Tuesday, but it's old hat for owner Andy Knapcik.
The new Jimmy John's restaurant at the corner of Nappanee Street and Bypass Road will be his 13th – eight of which are in Michiana. It joins other Jimmy John's locations at 155 C.R. 6 West, just east of Emerson Drive, 4542 Elkhart Road (U.S 33) in Dunlap and 2028 Lincolnway East in Goshen.
The new Nappanee Street location will be open from 10 a.m. to 10 p.m. seven days a week.
Q: How long have you been in the restaurant business?
A: I’ve been in the restaurant business since 2003. This is our 13th Jimmy John's overall.
Q: What can people expect from this Jimmy John's?
A: We just think is a good location. We have been hearing from a lot people wanting a store in Elkhart.
Q: Do you expect it to be different than in other locations?
A: Definitely, the Nappanee Street location has a different look to it. There is a new style, but it’s still going to feel like a Jimmy John's. It’s not a huge difference.
Q: Do you own other restaurants?
A: We originally opened Jimmy John's in 2003. I also opened a branched bar named Bar Louie in 2007. We have owned one Jimmy John's at University Park Mall since 2008. We opened a south side location in December 2015.
Q: What about Jimmy Johns do you want people to know?
A: We want people to know that we deliver. We are the fastest growing sandwich chain and we are excited to add another Elkhart location.
