Chef spends Wednesday prepping Thanksgiving big enough for 2,000 people

    A chef and his team at Matterhorn Conference Center/Banquet and Catering spent Wednesday preparing a Thanksgiving meal big enough to feed 2,000 people. The meal, organized by the Salvation Army of Elkhart, will be dished up by more than 200 volunteers.

    Chef James Baxter and the rest of the staff at Matterhorn Conference Center in Elkhart get ready for a Thanksgiving meal fit for as many as 2,000 people.

    More than 200 volunteers from the Elkhart Salvation Army will join them Thursday from 11 a.m. to 2 p.m. to help dish up plates of holiday fare for the needy, the lonely and the downright hungry. Baxter and his staff prepped more than 1,300 lbs. of turkey, 450 lbs. of yams, 10 gallons of gravy and huge amounts of other traditional dishes.
