Elkhart County 4-H Fair Recipes: German Chocolate Cake

President’s Baked Item

German Chocolate Cake

Winner: Pat Stahly, Goshen

1 pkg. Baker’s German Chocolate

1/2 cup boiling water

1 cup butter

2 cups sugar

4 egg yolks, unbeaten

1 tsp. vanilla

1/2 tsp. salt

1 tsp. baking soda

2-1/2 cups cake flour

1 cup buttermilk

4 egg whites, stiffly beaten

Melt chocolate in boiling water, cool. Cream butter and sugar until fluffy. Add egg yolks, beat until well mixed. Add melted chocolate and vanilla, mix well. Sift together salt, soda, and flour. Add alternately with buttermilk to chocolate mixture, beating well until smooth. Fold in beaten egg whites. Pour into three 8- or 9-inch cake layer pans, lined on bottom with wax paper. Bake in 350 degree oven for 30 to 40 minutes. Cool. Frost tops only with coconut-pecan frosting.

Coconut-Pecan Frosting

2 cups evaporated milk

2 cups sugar

6 egg yolks

1 cup butter

2 tsp. vanilla

2-2/3 cup coconut flakes

2 cups chopped pecans

Combine evaporated milk, sugar, egg yolks, butter and vanilla. Cook and stir until thickened. Add coconut and pecans. It will thicken more as it cools.
